UNDERGROUND MANLY – WE’VE OPENED THE DOORS!
On Thursday 3rd November, we opened the doors to our third venue, Underground in Manly. Located underneath our original BrewPub, and opposite Manly Wharf, Underground is an all-day eatery serving breakfast through to shared snacks and mains.
Sheree is the Mastermind behind the interior design of all our venues, from initial scope of design through to sourcing materials, items and installation. Underground in particular, Sheree’s design influence was a log cabin, the end result a warm and cosy space with a focus on natural materials. Rustic, recycled timbers salvaged from an old Victorian cottage have been paired with black steel and bunker lighting and a pictorial history of Manly’s wharf is depicted upon the walls. Many elements of the venue have been constructed personally by Sheree and our Design Wolf Joel, just like our many in-store displays and office fit-outs – all handcrafted from pieces found throughout the brewery.
Step outside the cabin and an array of outdoor seating provides the perfect vantage point to watch the world go by and the glassed frontage gives those sitting inside on the long tables and leather booths just as much to take in.
Chef Rob has developed the menu and will be supported in-venue by Head Chef Pablo. Fresh and modern dishes are complemented by a range of house-made elements including chutneys and aioli through to burger patties and our much loved Stout-infused farm house bread. The team have sourced meat that is free range, hormone-free and RSCPA accredited from NSW, and the eggs are courtesy of Egganic Farm – organic, free range, sustainable and ethical.
We’ve made the most of having the brew house sit directly above, installing 12 beer taps featuring a range of our core and Keller Door (limited edition small batch) beers – all flowing fresh from the tanks upstairs, travelling in big pipes through the roof.
In addition to the beers, a jam-packed ‘un-beer’ menu takes you on a flavour journey through a selection of Australian wines and distilled spirits as well as smoothies, pressed juices, milkshakes and Single Origin coffee. The cocktail selection has been perfected over the last six months by Rob and Luke; all inspired by barrel-aged spirits, Brookvale Union and the broader 4 Pines beer range.
